This week I had the great pleasure to host a cava tasting for a fantastic wine tasting group in Stockholm. So many wonderful and interested wine loving people. One of the wines I had with me to present was Recaredo´s Brut Nature 2007. A wonderful Cava that I have talked about earlier here on the blog.
Recaredo is a biodonamic producer that has committed to the following:
100% VINTAGE BRUT NATURE CAVA
100% OWN VINEYARDS IN THE ALT PENEDÈS REGION
100% ORGANIC AND BIODYNAMIC VINE-GROWING
100% HAND HARVESTED
100% COMPLETE OWN VINIFICATION
100% AGED FOR AT LEAST 30 MONTHS
100% AGED IN CELLARS WITH NATURAL CORK STOPPER
100% ‘REMUAGE’ BY HAND IN TRADITIONAL ‘RACKS’
100% DISGORGED BY HAND WITHOUT FREEZING
The vine yards of Recaredo are beautiful and somewhere I always want to go when visiting Sant Sadurní.
This particular cava is one of the great once that we can buy in Sweden, since the market is controlled by the monopoly. The style is light and extremely fine. In the nose a bit of mineral and ripe fruit. Citrus fruit and yellow apples in a very lively and fresh taste with structure and a long after-taste. Recaredo writes about the vintage 2007: “We at Recaredo, believe that 2007 has been an exceptional year, especially for the Xarel·lo variety, with a very important structure and acidity for our style of production. ”
I’m already looking forward to the next time I have the chance to open a bottle from Recaredo.
