I know that many of you live in places where the spring has come already or maybe even the summer. But here in Sweden we are still struggling with the snow which is quite unusual this late in March. We still have a lot of snow and the thermometer shows numbers below zero, enoyingly enough. So I thought I’d share a sweet treat with you to cheer you up.. if you need it.
375 g plain flour
1 tablespoon baking powder
165 g brown sugar
125 g unsalted butter
250 ml milk
185 g Fresh or thawed frozen blueberries
Preheat owen to 210 C (415F). Grease or brush to trays of six 125 ml muffin holes with melted butter. Sift the flour and baking powder into a large bowl. Stir the sugar and make a well in the centre.
Add the combined melted butter, eggs and milk all at once, and fold until just combined. Do not overmix – the batter should look quite lumpy.
Fold in the blueberries. Spoon the batter into the prepared tin. Bake for 20 minutes, or until golden brown. Cool on a wire rack.
I love muffins! And yes, they go really well to somw sweet Cava…

This week I had the chance to try Mia, a new wine from Freixenet made by the wine maker Gloria Collell. The Mia series is made up of three wines as far as I know, with a white, a red and this sparkling.
And I must say that I like this sweet fresh sparkling wine very much. It is made of Moscato grapes and is very grape specific with fruity and flowery notes.
I tried it this friday together with my friends to our dessert. Nice ice-cream, some fresh fruits and whipped cream was a great combination and everyone liked it very much. But I think that a fresh sorbet or a fruit-sallad would be the optimal combination.
I can highly recommend this wine, and if you live in Sweden I’m happy to say that this is available at the monopoly. It has number 7897 and costs 49:-, so it is a real bargain!

The winter is holding on here in cold Sweden and they are telling us on the news that there will even be more snow coming next week! Seriously!?! It is the middle of March and we have -17 in the mornings. That is just not fair!
All this cold makes me long for Penedès even more and soon I’ll run out of Cava in the cellar as well. Then life will look very grim indeed.
But I get updates from my friends in Catalonia every week, and it is nice to see that the sun is shining and that they at least have all the Cava they need. 🙂
This week I got a mail from the great guys running CavaEmotions. A fantastic company helping tourists around the area on bikes, by foot or car or even horse I think. And the best thing is that you can go on their hikes completely on your own if you want, through trails mapped in a software you can download to your Smartphone or Ipad. So you basically just download the trail you want to go, if it is hiking, by bike or car, and then you just follow it as you would on any GPS. And along the way you will get information about sites you pass along the way.
